   Pre-slaughter handling

The pre-slaughter handling of animals in the meat processing facility is crucial for the meat quality. In addition, MPS Red Meat Slaughtering can provide your staff with proper training and even design your barns, sheds and stables. Many sources state that it is not the stunning method in itself that determines the meat quality but rather how the animals are handled prior to being slaughtered.

MPS has various stunning aids, including ritual stunning systems.

Bleeding and hollow knife systems

Depending on the capacity and customers’ requirements, MPS Red Meat Slaughtering supplies ergonomic manual workstations and advanced Q-line hollow knife blood collection systems.

   Transfer

  • Stainless steel transfer platforms
  • Transfer systems for transferring the cattle from a bleeding shackle onto a dressing hook

    • transfer conveyor (45 - 150 cattle/hour)

Pre-dehiding, udder removal and bung closing

We offer stainless steel lifting platforms that can be optimally positioned. The lifting direction is at an angle, parallel to the carcass, so the operator’s working position is more ergonomic.

Dehiding

MPS has developed several solutions to assist dehiding operators in the final stage of dehiding. To prevent cross-contamination from the dirty part of the hide, all dehiders have a downwards vertical movement.

  • Junior (up to 15 cattle an hour)
  • Senior (up to 50 cattle an hour)
  • Gorilla Compact  (20 - 50 cattle an hour)
  • Gorilla (50 - 80 cattle an hour, per unit)

 Head removal and washing

MPS has developed a special transport device for removing the head. It is equipped with a hoisting system and transports the head to the head washing cabinet. After washing, the head is automatically hoisted onto the inspection conveyor.

  Evisceration

Adding value to the carcass drives the evisceration process.

MPS designed its evisceration systems on the basis of:

  • optimising labour use
  • maximising slaughter efficiency
  • minimising contamination

   Chilling and Cooling

Chilling

Most modern meat plants are equipped with a quick chill tunnel to reduce the carcass temperature as quickly as possible and avoid unnecessary weight loss.

Cooling or equalisation rooms

MPS supplies both automatic and manual transport systems for the cooling rooms.

  Dispatch

For efficient dispatch of carcasses or meat racks, MPS provides several solutions for loading the trucks from the internal rail system.

The sheep are transported by a conveyor system through the bleeding area on a separate bleeding shackle. After bleeding, the sheep are transferred to a single dressing hook or sheep gambrel where they are dehided and dressed.

Which is better, electronic or gas stunning? Not an easy question to answer, but since we build and supply both systems, we are the only company in the world that can provide the answer based on the following elements:

Bleeding and hollow knife systems

Depending on the capacity and customers’ requirements, MPS Red Meat Slaughtering supplies both vertical and horizontal bleeding systems, from ergonomic manual workstations to advanced Q-line hollow knife blood collection systems.

  Scalding

The scalding method used is becoming increasingly more important in pig slaughterhouses today because of the operating costs involved and the occurrence of cross-contamination from scalding water recycling. All scalding systems are supplied with the necessary temperature control systems (steam or hot water) and circulation pumps. Heat exchangers are optional.

Q-line condensation scalding

The MPS condensation scalding tunnel (vertical scalding) is based on a modular design for different circumstances and types of pigs. A free standing or hanging construction is optional.

Dehairing

Maximum dehairing results can only be achieved if the dehairing equipment is optimally designed for the scalding system. In addition to the equipment used, factors such as the scalding time, scalding temperature, breed of pig and seasonal influences can all affect the dehairing result. MPS therefore offers different types of dehairing machines for specific conditions.

Gambrelling

After dehairing, the pigs are gambrelled or hooked and hoisted up to the buffer rail in front of the machine/dressing line conveyor. There are several gambrelling tables. The Q-line gambrelling tables with conveyor can be combined with automatic gambrel return systems in order to create a more ergonomic working position for the operators.

Carcass finishing

The MPS machine line can be supplied with a various kinds of pre-dryers, flaming furnaces, and washing and polishing machines in order to achieve the most effective skin cleaning and decontamination. These machines will minimise bacterial growth and contribute to good plant hygiene.

Drying

  • Removal of loose hairs
